At One&Only; Palmilla, the Stewarding Manager plays a critical role in supporting the Food&Beverage; operation by ensuring the highest standards of cleanliness, sanitation, food safety, and operational efficiency across all kitchens, stewarding areas, restaurants, bars, and banquet facilities.

Thispositionisresponsibleforleadingthestewardingteam,managingoperatingequipmentinventories,controllingdepartmentalexpenses,overseeingstrategicreplacementprogramsforchina,glassware,silverware, andkitchenequipment, andensuringcompliancewiththeresort’s Food Safety Management System(FSMS)certificationandallfoodsafetyregulations.

The Stewarding Managerpartnerscloselywith Culinary, Food& Beverage, Engineering, Purchasing, Finance, and Human Resourcestomaintainexceptionalstandardswhileoptimizingcostsandsupportingtheoverallguestexperience.

Key Dutiesand Responsibilities Leadership& Team Management

Organizeand leadthe Stewardingteam,coordinatingdailyactivitiesthroughsupervisorsand shiftleaders.

Recruit, interview,train, coach, anddevelopteammembersinaccordancewithcompanypoliciesandprocedures.

Ensureadequatestaffinglevelsbasedonoperationalneedsandapprovedstaffingguidelines.

Monitorattendance,productivity, groomingstandards, andcompliancewithcompanypolicies.

Foster a positive andcollaborativeworkenvironmentfocusedonteamwork,accountability, andcontinuousimprovement.

Food Safety &Sanitation;

Ensurecompliancewithallhygiene,sanitation, andfoodsafetystandardsthroughoutallstewardingandkitchenareas.

Maintaincompliancewiththeresort's Food Safety Management System(FSMS)certificationrequirements.





Supportinternalandexternalaudits,inspections, and correctiveactionplanswith Hygiene Manager

Develop,implement, and monitordaily,weekly,monthly, anddeep-cleaningprogramsusingstandardizedchecklists.

Conductdailyinspectionsofallareasunderresponsibilitytoensurethehigheststandardsofcleanlinessandorganization.

Operational Support

Maintainallkitchens,stewardingareas, restaurants,bars, andbanquetfacilitiesinoptimaloperatingcondition.

Coordinatewith Culinaryand Food& Beverageteamstosupportalloperationalrequirements.

Attend BEOmeetings,pre-conventionmeetings, andoperationalplanningmeetingsasrequired.

Ensureproperhandling,storage,cleaning, andmaintenanceofalloperatingequipment.

E vents&Internal; Functions Support

Overseeand supportthesetup,execution, andbreakdownofbanquetevents,weddings,conferences,outdoorfunctions, andspecialresortevents.

Coordinatewith Banquets, Food& Beverage, Culinary, and Event Servicesteamstoensureallstewardingrequirementsarefulfilledforeachevent.

Ensuretheavailability,cleanliness, transportation, andproperhandlingofalloperatingequipmentrequiredforeventsandfunctions.

Workcloselywiththe Stewarding Supervisor and/or Chief Stewardresponsibleforsetupsandlogisticstoexecuteeventrequirementsefficientlyandaccordingtoestablishedtimelines.

Managestaffingplansandstewardingresourcestosupportbanquetoperationsandlarge-scaleevents.

Coordinateequipmentmovementandstoragebeforeand aftereventswhilemaintaininginventorycontrol andminimizingbreakage.

Supporttheplanningandexecutionofinternalcelebrations,colleagueevents,recognitionprograms,townhalls,wellnessactivities,holidayfestivities, andotheremployeeengagementinitiatives.
