About the Role

Our client, a prestigious fine dining restaurant located in the beautiful coastal city of Acapulco, Guerrero , is actively seeking a highly skilled and charismatic Sumiller y Gerente de Sala Experto . This key position demands a deep understanding of wine, exceptional service standards, and proven leadership capabilities. You will be the guardian of the cellar, curating an impressive wine list that complements our exquisite cuisine, and will also lead the front-of-house team to deliver unparalleled guest experiences. Key Responsibilities

- Curate, manage, and update the restaurant's extensive wine list, ensuring a balanced and appealing selection across various regions, varietals, and price points.
- Develop and execute wine pairing recommendations for menu items and assist guests in selecting the perfect wine to complement their meal.
- Conduct regular wine inventory, order new stock, and manage cellar organization to ensure optimal storage conditions and minimize waste.
- Lead, train, and motivate the service staff to uphold the highest standards of hospitality, etiquette, and product knowledge.
- Oversee daily front-of-house operations, ensuring smooth service, efficient table management, and prompt resolution of any guest issues.




- Develop and conduct wine training sessions for the service team to enhance their expertise and service capabilities.
- Ensure the dining room ambiance, cleanliness, and overall presentation meet the restaurant's luxury standards.
- Collaborate with the Chef and management team to create cohesive dining experiences and special event menus.
- Manage reservations and guest communications effectively.

Requirements

- Minimum of 3 years of experience as a Sommelier or Restaurant Manager with significant wine program responsibilities.
- Formal wine education and certification (e.g., WSET Level 3 or higher, CMS Certified Sommelier) is highly preferred.
- Extensive knowledge of global wine regions, grape varietals, winemaking techniques, and food-wine pairing principles.
- Proven experience in inventory management, purchasing, and cost control for wine programs.
- Exceptional leadership, communication, and interpersonal skills.
- Strong understanding of fine dining service standards and guest relations.
- Ability to train and mentor staff effectively.
- Proficiency in POS systems and reservation management software.
- Passion for wine and hospitality, with a refined palate and excellent presentation skills.
- Must be able to work flexible hours, including nights, weekends, and holidays.
