About the Role

Our client, an avant-garde gastronomic destination in Mexicali, Baja California, MX , is seeking an accomplished and passionate Sumiller y Gestor de Carta de Vinos to curate and manage its exceptional wine program. This role is essential for enhancing the dining experience by providing expert wine recommendations and exceptional service to guests. The ideal candidate will possess an in-depth knowledge of integral wines, spirits, and other beverages, coupled with outstanding communication and sensory evaluation skills. Responsibilities include developing and maintaining an innovative wine list, managing inventory, controlling costs, training service staff on wine knowledge, and ensuring the highest standards of cellar management and service. Key Responsibilities

- Develop, curate, and continuously update an extensive and exciting wine list, showcasing a diverse range of regions and varietals.
- Provide expert wine recommendations and pairing suggestions to guests, enhancing their dining experience.
- Manage all aspects of wine inventory, including ordering, receiving, storage, and stock rotation.
- Conduct regular wine tastings and staff training sessions to educate service personnel on wines and proper service techniques.
- Maintain the cellar in optimal condition, ensuring proper temperature, humidity, and organization.
- Monitor wine sales, costs, and profitability,



implementing strategies to achieve revenue targets.
- Build and maintain relationships with wine distributors and producers to source unique and high-quality wines.
- Ensure compliance with all local regulations regarding alcohol service and licensing.
- Stay abreast of current wine trends, emerging regions, and new producers.
- Assist with the selection and management of spirits, cocktails, and other beverage offerings.

Requirements

- Proven experience as a Sommelier or Wine Director in a reputable establishment.
- Extensive knowledge of international and domestic wine regions, grape varietals, and winemaking techniques.
- Certification from a recognized sommelier association (e.g., Court of Master Sommeliers, WSET) is highly preferred.
- Exceptional palate and sensory evaluation skills.
- Strong understanding of beverage cost control, inventory management, and P&L; statements.
- Excellent communication, interpersonal, and customer service skills.
- Ability to train and motivate service staff effectively.
- Familiarity with wine cellar management and best practices.
- Must be legally able to serve alcohol.
- Located in or willing to relocate to Mexicali, Baja California, MX .
