Nuty Foods, the company behind SpiceX chilled ready-to-eat meals sold in U.S. retail, is looking for an experienced chef to scale our recipes into high-volume production. This is an ongoing contract role, by assignment, with on-site work at our production facility in Culiacán, Sinaloa, Mexico. The first assignment starts 3rd week of October 2026 and runs about 2 weeks.
What you'll do
• Scale four Indian curry sauces (makhani-style tomato-cream, saag, Chettinad, bhuna masala) from kitchen batches to 100 L+ batches in an emulsifying steam-jacketed kettle.
• Adapt recipes to locally sourced ingredients while matching an agreed taste, color and texture standard.
• Set process steps (order of addition, times, temperatures, agitation, cooling) and write standardized recipes and SOPs with quality checkpoints.
• Train the production team hands-on.
• In later assignments, scale new protein + sauce products (Korean, Filipino, Mexican, Middle Eastern, Thai), including rotisserie-cooked proteins.
What we're looking for
• 5+ years as a professional chef with deep Indian cuisine experience, especially North Indian curries and gravies.
• Experience scaling recipes in a commissary, central kitchen, large-volume catering or food manufacturing.
• Familiarity with steam-jacketed kettles; experience with cook-chill, HPP or packaged foods is a plus.
• Clear recipe and SOP writing.
• Able to travel for 1–2 week on-site assignments; Spanish is a plus.
Compensation
$1,500 per week, plus travel, lodging and on-site expenses covered. The first assignment is about 2 weeks.
