Role Purpose
The Food & Beverage Manager will lead the strategic, financial, and operational performance of the resort's Food & Beverage division, ensuring exceptional guest experiences while delivering sustainable profitability, strong cost discipline, and continued market positioning.
This role requires a leader who combines luxury hospitality expertise, strong financial acumen, operational excellence, and commercial vision .
The successful candidate will have a deep understanding of F&B; financial performance, including revenue management, menu engineering, food and beverage cost, payroll productivity, forecasting, budgeting, inventory control, and profitability by outlet.
Equally important, this individual will contribute to positioning our restaurants as culinary destinations in their own right , with particular attention to Amapola and its continued development within the gastronomic landscape of Valle de Guadalupe. The Impact of This Role
The Food & Beverage Manager will play a critical role in transforming culinary excellence into strong business performance.
The position will be responsible for creating the appropriate balance between:
Outstanding luxury guest experiences Revenue generation and profitability Food & beverage cost optimization Labor productivity and payroll management Service excellence and consistency Restaurant positioning and reputation Team development and engagement Innovation and commercial activation
Success will be measured not only by how our guests experience our restaurants, but also by how effectively each outlet performs as a sustainable and profitable business.
Key Responsibilities Financial Performance & Business Analysis Assume ownership of the financial performance of the Food & Beverage division and each individual outlet. Analyze revenue, average check, covers, food cost, beverage cost, payroll, productivity, departmental expenses, and profitability. Review P&L; performance and implement corrective action whenever results deviate from budget or forecast. Lead the preparation and follow-up of annual budgets, forecasts, and monthly business reviews. Develop action plans to improve revenue and profitability without compromising guest experience or product quality. Partner closely with Finance to strengthen cost control, purchasing,
inventory management, and operational discipline. Analyze pricing and contribution margins and actively participate in menu engineering decisions. Identify revenue opportunities according to seasonality, occupancy, local demand, events, and market trends. Restaurant Positioning & Revenue Generation Develop strategies that position the resort's dining venues not only as hotel restaurants, but as desirable culinary destinations for hotel guests, local residents, and visitors to Valle de Guadalupe . Create commercially relevant programming, culinary events, collaborations, and experiences that generate incremental revenue and strengthen brand recognition. Work closely with Sales, Marketing, PR, Revenue Management, and the culinary leadership team to develop effective restaurant positioning and communication strategies. Monitor market dynamics, guest behavior, restaurant trends, and competitive positioning to identify new business opportunities. Develop strategies to increase restaurant covers, average check, beverage revenue, repeat business, and overall outlet profitability. Amapola & Culinary Positioning
A key priority of this role will be supporting the continued positioning of Amapola as one of the resort's signature culinary experiences.
Amapola is led by chefs Solange Muris and Benito Molina and is presented by Banyan Tree Veya as a fine-dining concept celebrating Baja California's land, sea, local ingredients, and seasonality.
The Food & Beverage Manager will:
Support the commercial and operational strategy of Amapola while protecting the integrity of its culinary identity. Strengthen the restaurant's positioning and reputation within Valle de Guadalupe's competitive gastronomic landscape. Build strong collaboration between culinary, service, marketing, PR, reservations, and hotel operations. Analyze business performance and implement strategies to optimize demand, revenue, and profitability. Protect the elevated service standards and attention to detail expected from a destination fine-dining experience. Develop opportunities that strengthen Amapola's visibility and desirability while remaining authentic to its culinary philosophy. Operational Excellence Lead and oversee the daily performance of all Food & Beverage outlets. Ensure consistent execution of luxury service standards. Establish effective operating procedures, controls, and accountability mechanisms. Monitor service quality, product consistency, hygiene, maintenance, and presentation. Ensure efficient scheduling and staffing according to business demand. Maintain strong coordination between front-of-house and culinary teams.
Actively engage with guests and respond effectively to feedback and service recovery situations. People Leadership & Development Inspire, coach, and develop the Food & Beverage leadership and service teams. Build a culture of accountability, hospitality, commercial awareness, and attention to detail. Establish clear performance expectations for managers and supervisors. Work closely with Human Capital on recruitment, succession planning, talent development, engagement, and retention. Ensure continuous training in luxury service, product knowledge, wine, storytelling, upselling, guest engagement, and operating standards. Create a working environment aligned with the Banyan Group philosophy: “I Am With You.” Guest Experience Ensure every restaurant and bar delivers an experience consistent with the ultra-luxury positioning of the resort. Maintain a visible management presence during key service periods. Develop personalized experiences that create emotional connection and memorable moments. Analyze guest feedback and translate insights into measurable improvements. Ensure food, beverage, service, atmosphere, storytelling, and sense of place come together as one cohesive experience. Critical Skills & Qualifications Proven leadership experience in Food & Beverage within luxury hotels, resorts, fine dining, or high-end restaurant operations . Strong financial and analytical skills with demonstrated experience managing P&L;, budgets, forecasts, food cost, beverage cost, payroll, inventory, productivity, and outlet profitability . Strong commercial mindset and understanding of restaurant revenue generation. Experience with menu engineering, pricing strategies, cost controls, and operational analysis. Demonstrated ability to position and develop distinctive restaurant concepts. Strong understanding of luxury service and fine-dining operations. Excellent leadership, communication, and team-development capabilities. Strong organizational abilities and attention to detail. Ability to collaborate effectively with Culinary, Finance, Marketing, Sales, Revenue Management, PR, and Human Capital. Knowledge and appreciation of wine, gastronomy, and destination dining is highly desirable. Fluency in English and Spanish preferred. What Makes This Role Unique
