**Location**: Greenough, Montana**Salary/Wage** $60k Annually**Position Overview**Join the Team at Montana's Premier Luxury Ranch Resort!
Nestled on a breathtaking 37,000-acre ranch, The Resort embodies the spirit of the American West.As a family-owned, award-winning destination, we inspire both guests and team members alike.The Sous Chef is responsible for the culinary programs at The Resort.Supervises, delegates and works "hands-on" in the kitchen.Assists in the training and development of kitchen personnel with menu items, recipes, cooking methods, procedures, policies and operation of equipment, utensils and machinery.Maintains a safe and sanitary work environment for all employees.Required duties include menu- planning, preparation of budgets, maintaining payroll, food costs/inventories and other records in a timely manner.
**Responsibilities**- Supervise culinary team members through multiple meal functions to ensure that methods of cooking, garnishing and portion sizes are as defined by recipes and consistently adhered to- Exhibit culinary talents by personally performing tasks while leading the staff and managing food-related functions- Prepare and cook foods of all types, either on a regular basis or for special guests or functions- Identify and communicate production needs to culinary team members- Meet daily with Executive Chef and Culinary management to coordinate and ensure production standards, determine specials, employee meals, review kitchen personnel needs and issues,
etc.- Conduct shift meetings with culinary department- Understand and follow the food allergy procedure and special orders/restrictions- Estimate daily production needs and communicate production needs to culinary team members- Assist in the development of menus and food items- Work to continually improve guest dining satisfaction- Improve service by communicating and assisting to understand guest needs, providing guidance, feedback, and individual coaching when needed- Submit future goals, operational improvements, and personnel management with our Culinary Management- Provide day-to-day guidance and oversight of culinary team members; actively promote, train, coach, and recognize performance- Interview, hire, train, and develop culinary team members- Identify, address and document individual employee performance according to standard operating procedures- Perform a daily "walk through" of inventory to prioritize product utilization- Purchase and order of all food product and supplies for multiple outlets- Manage culinary operations and ensures compliance with all Food & Beverage policies, sanitation, food standards and procedures.
- More supportive activities**Required skills**- Bachelor's (Baccalaureate or Licenciatura) Degree in Hotel, Restaurant Management or tourism from an accredited institution in the U.S., Canada, or Mexico or, Alternative Path:
A post-secondary diploma or certificate in Hotel or Restaurant Management combined with at least three years of relevant work experience (This diploma or certificate must be from an institution in the U.S., Canada, or Mexico, and the program should last at least two years. Diplomas from outside these countries usually do not meet TN Visa criteria.)- Experience as a Lead Line Cook, or Sous Chef is helpful, but we are willing to invest and teach the right individual- Proven ability to plan menus- Order and control inventory- Valid Food Handler's License- Valid State Driver's License with two years driving experience**Housing type**- We offer housing for 3 months to allow them to settle in and establish their own place to live.Single occupancy room in The Junction apartment building.Bathroom in unit.Shared facilities (kitchens, laundry), free wifi.
- $350 per month ($175 deducted from payroll every 2 weeks).
$300 deposit ($100 deducted from payroll for the first 3 paychecks)**Additional comments**We require that they have a drivers license for at least 2 years and a clean motor vehicle report so that they can drive our vehicles while they're in the process of getting their MT license.Gas station, convenience store, and bar located next to the apartment building.Ten minute drive to The Resort.Twenty minute drive to the town of Seeley Lake for groceries, restaurants, etc.
